Young, wild and free. Kite-ish by name, kite-ish by nature. Swirl it, share it, guzzle it. An energetic number to brighten up an otherwise forgettable night: bright, cooling and flowing. Expect black cherry and five-spice on the nose, bright red fruits and bramble on tongue and a richness to finish off. Belter.

Drinkers of this wine are a select crew indeed. You won’t be finding this in classy Aussie independents, let alone HK. But hey, that’s what we’re here for. Only the most expressive vineyards of the bunch were chosen for this Adelaide Hills label. Those with the potential to make a cool-climate wine with a bit of oomph made the cut. Each vintage they seem to raise the bar, thanks to a heavy lean on traditional methods and an open mind to work with the particularities of the fruit that comes in each year rather than any set recipe.

Pinot Noir fruit harvested on the 29th March 2017, sourced from Bill Hardy’s site in the cool climate region of Adelaide Hills. A long, slow fermentation was carried out with two short pump-overs daily to limit extraction. Following that, the wine went into French oak for 10 months, a mix of 1 to 4 year old barrels to impart further complexity and character in the wine.

A platter of cured meats and Camembert, a lamb, beef or tuna BBQ, roast pork, duck. Lots of options here, so good opportunity to get your chef on *flicks tea towel over shoulder*.
