But what we love even more is how it didn't quite reflect the wine Andre Bondar wanted to make, so the first release had to wait a year. Sure, the romanticism takes a hit, but it's exactly these uncompromising standards that sets Bondar apart. Dive into this year’s Violet Hour Shiraz for its studied elegance, overflowing fruit flavours whipped into tasty shape with a slight tannic structure.

Growing wine by the beach. It’s a tough life, but someone has to do it. Now here’s some real up-and-comers. Rooted in the McLaren Vale with lofty ambitions, Bondar has been part of the furniture in the Young Gun top 50 the last few years. Theirs is a small family outfit. With the oldest vines dating back to the 1950s and now in the hands of exacting winemaker Andre Bondar, every vintage is something different and complex, familiar yet fresh. Wine to get properly, unstoppably excited about.

FROM THE WINEMAKER

"Violet Hour is a blend of many different vineyard blocks and parcels of Shiraz (all from our RaynerVineyard). We always use wild yeast, but use different combinations of whole bunch and de-stemmed fruit,as well as varying time on skins depending on the block. The wines generally see older oak only, for an average of 10 months. Our final blend is put together in May, for bottling without fining or filtering in July."
