All Saints Estate harks all the way back to 1864, when two settlers from Scotland started growing vines in North East Victoria. Three siblings, Eliza, Angela and Nick are now the fourth generation to run All Saints. But stuck in the past, these guys ain’t. While they take advantage of the traditional tools at hand, like gentle pressing the harvest in a 135-year-old basket press, All Saints’ low intervention approach allows the grapes to grow wild and do their own thing too.
