Mad winemaker skills here. In that, the fruit is left to really do its thing. You’re hit with a fresh wallop of peach, grapefruit, rockmelon. Cool, long and sleek with a real classy finish to follow. The fruit comes from a single vineyard in cool Adelaide Hills Echunga, then it’s hand-picked and pressed straight to the barrel.

Growing wine by the beach. It’s a tough life, but someone has to do it. Now here’s some real up-and-comers. Rooted in the McLaren Vale with lofty ambitions, Bondar has been part of the furniture in the Young Gun top 50 the last few years. Theirs is a small family outfit. With the oldest vines dating back to the 1950s and now in the hands of exacting winemaker Andre Bondar, every vintage is something different and complex, familiar yet fresh. Wine to get properly, unstoppably excited about.


"2018 was a great year for Chardonnay in the Adelaide Hills. It was generally warmer and drier than the last couple of years and the resulting fruit was a great balance - full of flavour but with good acidity. The Chardonnay was all hand-picked in the cool of first morning, whole bunch pressed direct to barrel, and fermented naturally in French oak barrels (around 25% new) and two ceramic eggs. Some parcels were allowed to go through malo naturally until the balance of acidity was right. We chose not to stir the lees as we find with this block that tends to dominate the flavour profile. They were sulphured in July and then remained in oak until November before being blended, filtered and bottled in January."


Whip up a light stir fry for this one with plenty of shellfish - maybe crab or prawns - and some crunchy, fresh spring veggies. Tastes great after a long day's hiking. Tastes equally good after a long day spent on the couch.
