Paint it black, people. The dark side beckons. After 95 years without use, Ox Hardy's original slate fermenters needed some dusting off. Give them a quick reseal, and these giant, locally-quarried slate slabs were ready for business. And it turns out, they still work just beautifully. The fermenters create an even darker liquid - it’s almost black. And a flavour explosion. Intense blackberry, raspberry and rich dark liquorice. If the dark side is wrong, we don't wanna be right.

Say ‘limited amounts of easy drinking, handcrafted McLaren Vale wine’, and you’ve got our attention. Say it’s made by Andrew ‘Ox’ Hardy, and we’re hooked. Known nearly as much for his elegant pink shirts as his elegant winemaking style, Andrew’s minimalist winemaking philosophy has been passed down and perfected over five generations. With an 1871 block on his hands, Andrew’s not afraid to experiment with the best of the old and the new. Just how we like it.

FROM THE WINEMAKER

“Shiraz from the Moreton Bay block was shovelled into the open fermenters by hand, with the open ferment hand plunged three times a day for 12 days before the wine was pumped out and the skins dug out with bucket and shovel. Following basket pressing, the small batch of wine was matured for 18 months in the finest French oak barriques before bottling and release.”

FOOD MATCH

A smoky something will best match the big, fruity flavour of this shiraz. Get something going on the grill, or go for a veg that has a bit of oomph. A smoky eggplant perhaps.
