Buckle up! This one’s an adventure. Expressive as anything, this is practically art. In fact, what the heck, it is art! Our kind of art, anyway. It’s a complex aroma, with crushed strawberries and kirsch woven together with cured meat and turned earth. The palate is all comfort. Sweet fruit sitting on a forest floor. Pure bloody poetry.

A delivery from Rising makes any day feel like a reason to celebrate. Sat in the aptly named Christmas Hills in the Yarra Valley, their wine is small batch done right. Small parcels of delicious fruit, carefully chosen. We can’t help but admire the quiet way these guys go about each expression, it’s pure passion at play. For winemaker Anthony Fikkers, less is more when it comes to intervention. And after a hop, skip and jump across Italy, France, Germany and the Hunter Valley, 13 years later, he’s ready to share his passion for cool-climate goodness with anyone willing to slurp away.

"Sourced from the Roundstone Vineyard in the narrow Steels Creek Valley on the western side of the Yarra Valley, this 100% Cabernet Franc is grown in classic Yarra Valley soils of clay-loam over a deep clay base. Whole bunches were put into a fermenter and left to carbonic macerate for 10 days without any crushing, plunging or pumping over. It was then gently pressed to a small tank, the ferment was allowed to complete, then the wine was racked to a single old puncheon (500L) for maturation without sulphur dioxide for 5 months, until the end of winter. The wine was then racked from barrel, received a small amount of sulphur dioxide and was bottled without filtration."

It’s hard to go wrong here. Noodles are a go. Cheeseboards are a no-brainer. Or pepperoni pizza. Netflix and swill written all over it.
