A serious sorts wine, with an impressively bold, no-holds-barred character. We love how a Cab Shiraz blend is quintessentially Aussie. Never deferring to old world purists, doing things our own way instead. And this one is such a fine example of the beast. Expressive, velvety and balanced. At its best now or before 2025.

Cutting his teeth at Yalumba winery for twenty years, former chief winemaker Simon Sorby Adams has decided to go off piste with his own venture. With intricate knowledge of Barossa and Eden Valley vineyards, there’s few who know how to make a ripper small batch bottle like Simon. Our two cents? Two cool-climate vineyards (with some vines first planted in 1932) plus a black book with the best growers in the Barossa sets Sorby Adams up to make some pretty mesmerising stuff, and they don’t disappoint.

FROM THE WINEMAKER

Named after my great uncle The Reverend Canon R.K. Sorby Adams OBE who was the Anglican Minister at St. Hugh’s Church in my hown town of Angaston from 1956 – 1960. "A glorious blend of two classic grapes, the magnificently expressed bouquet shows blackcurrant, spiced plum, vanilla, chocolate brownie and cedar characters. The palate is equally gratifying with outstanding fruit weight and power, wonderfully enhanced by velvety mouthfeel and silky tannins. Full-throttled yet balanced and structured with layers of delicious flavours.

FOOD MATCH

We’re on here, Honkers! Char-siu pork is an absolute belter with this big-bodied bottle. Seems like it was written, no? Red or smoked meats and hard cheeses will also do the job with serious panache.
