This zingy friend is the tastiest way to cut through the Hongkers humidity. Splash this into the glasses of some notorious company and you’ve got quite the afternoon on your hands. Very up and about acidity, plenty of fresh fruit, pear and quince and faintest pepper. Textural, yummy stuff.

Growing wine by the beach. It’s a tough life, but someone has to do it. Now here’s some real up-and-comers. Rooted in the McLaren Vale with lofty ambitions, Bondar has been part of the furniture in the Young Gun top 50 the last few years. Theirs is a small family outfit. With the oldest vines dating back to the 1950s and now in the hands of exacting winemaker Andre Bondar, every vintage is something different and complex, familiar yet fresh. Wine to get properly, unstoppably excited about.


"The Fiano was picked at the beginning of March in the cool of the morning, and transported to the winery for immediate processing. We top loaded it straight into the small press, and ran the very lightly pressed whole juice immediately to two ceramic eggs and a barrel for fermentation. The parcels were allowed to warm, and fermented naturally without any addition. The finished wines remained sitting on lees until August. The three parcels were blended and allowed to settle before being racked pre-bottling in late August."


We can’t help but think sun-drenched rooftop with this Fiano. So we’d plump for a tray of salty, creamy oysters, knocked back by a boisterous with great enthusiasm.
