Rich, velvety characters come to play: chocolate, liquorice, spice and mulberry. Good to go now, or if you can bear the torture of waiting, it’ll cellar til 2027.

Cutting his teeth at Yalumba winery for twenty years, former chief winemaker Simon Sorby Adams has decided to go off piste with his own venture. With intricate knowledge of Barossa and Eden Valley vineyards, there’s few who know how to make a ripper small batch bottle like Simon. Our two cents? Two cool-climate vineyards (with some vines first planted in 1932) plus a black book with the best growers in the Barossa sets Sorby Adams up to make some pretty mesmerising stuff, and they don’t disappoint.

FROM THE WINEMAKER

"Deep crimson red-purple with beautiful fruit aromas of black plum, blackberry and blackcurrant with macerated summer berry fruits and some raspberry high-tones. Hints of Asian spice, mulberry, sultry seasoned oak, licorice, “Old Jamaican” chocolate and violets. Perfumed and pure the aromas instantly draw you into the glass."

FOOD MATCHING

Sure fire winners: herbed lamb or salt and pepper pork with some greens (gotta eat those greens). Bonus points for a bit of ‘salt bae’ action when it comes to serving up.
